Delicata Squash

So I've been on this 'try random things at the grocery store' kick. You just never know when you'll find your new favorite food. Plus, how could you not when you have a selection like this??

Well today's adventure led us right to these beautiful things.

I have never had them and had no idea what to expect when I opened them up...

Surprise! I got to do a little early 'pumpkin carving' this year!

I scraped the seeds out with a spoon. Has anyone ever tried roasting them like pumpkin seeds?

Then I baked them skin up for 40 minutes on 350.

They turned out absolutely delicious! They are slightly sweet with a buttery texture. I sprinkled them with some cinnamon and pecans. Matt loved them too!! It was the perfect fall meal! Who says you can't have sweets for dinner!?!
