I got a little creative in the kitchen this afternoon and created my own pasta sauce. I like to just throw things together until it tastes right so bear with me as I try to pin down this recipe for you.
Ingredients 1 small chicken breast tenderloin 1 tsp extra virgin olive oil 2 tbsp chopped basil 4 cloves garlic 1/2 cup whole wheat pasta 3 cups fresh baby spinach 1 cup tomatoes (I used grape tomatoes) 1/4 cup plain greek yogurt 2 tbsp parmesan cheese (fresh, not the kraft in a bottle)
Grill some chicken in a pan. I seasoned mine with a tbsp of shredded basil, 1 clove of chopped garlic, and a tsp EVOO. It normally takes about 10-15 min to cook on med/high with a lid on. Make sure to flip it a couple of times to get both sides cooked.
Boil some whole wheat pasta. I used farfalle.
In the food processor combine 3 cups of spinach (it blends down to nothing!), a cup of tomatoes, 3 cloves of garlic, 1 tbsp basil, and 1/4 a cup of plain greek yogurt.
Pour sauce in a pan and heat on medium until it begins to simmer. Add two tbsp fresh grated parmesan cheese and pepper to taste.
Mix and enjoy!!
