Last night we had roasted squash and zucchini for dinner. It was amazing!! I don't know what happens to a vegetable when you roast it to make it taste so stinking good, but it's magical.
This was so simple to make. I just cut the squash and zucchini into slices shaped like french fries. Then I tossed them in some olive oil, salt, and pepper (You can season them however you like. I'm just a huge fan of really tasting all that vegetable-y goodness. I'd love to hear your suggestions! )
Then bake them on 450 for 15-20 min depending on how "done" you want them!
I think I'm going to roast some cauliflower today! What is your favorite vegetable to roast??
