Here is a delicious recipe for you to try. We made Mexican quinoa last night and used the leftovers tonight. I love prepping food and being able to use it multiple times! I also made homemade salsa to eat with these as well as use it for salad dressing and chicken topping.
For the wraps:

Roll it up and eat!
For the Quinoa: adapted from here
1 tbsp of olive oil 2 cloves of garlic (minced) 1 jalepeno (chopped) 1 cup of quinoa 1 cup of corn 1 can of black beans 1 can of diced tomatoes 1 cup of chicken or vegetable broth 1 tsp chili powder 1/2 tsp cumin salt and pepper to taste 1 avocado chopped cilantro juice of 1 lime
Heat olive oil on medium/high heat on the stove. Add garlic and jalepeno. Cook for a minute or two and then add all ingredients except the avocado, cilantro, and lime juice. Cook for about 20 minutes covered.
Mix avocado, cilantro, and lime juice and add them once the dish is finished cooking.
For the Salsa:
2 cans diced tomatoes 2 jalepenos 4 cloves garlic cilantro
I used the ninja to blend mine, but you can use any blender. Slice the jalepeno and get rid of the seeds. Put one can of tomatoes and the rest of the ingredients in the blender and mix. Then add the second can of tomatoes.
Fresh veggies are always best, but if you go the canned route make sure you get low sodium/no salt added and check the ingredients to make sure it's just veggies!
