Vegetable Minestrone (meal 3)

This was a dinner after my heart. Soup is perfect for cold Buffalo nights and it has some of my very favorite veggies in it!  not pictured: EVOO

I love peeling vegetables! Anyone else? I had a lot of fun peeling these carrots! haha

This soup was super simple to make.

1. Chop the veggies and toss them in a little olive oil, salt, pepper, and cumin

2. Roast the veggies (one of the best smells ever)

3. Simmer the chicken broth, tomato paste, pasta, and beans.

Toss the veggies into your soup and simmer for a couple more minutes. If you like parmesan cheese, you can grate a little onto the top.

It is super easy and so healthy! Plus it made leftovers for quick lunches! I love that! Eating clean should be simple!
