Taquitos and Guacamole

Ok so we all know I love (read- am obsessed with) Mexican food. I would eat it EVERY day if I could. So next up on the clean Mexican dinner list is this yummy dish!

I will start with the guacamole. I used:

1 avocado, 1 clove of garlic, 1/4 cup pico (recipe here), juice from half of a lime, and salt to taste

1.Cut across the avocado and twist to open. Hit the pit with your knife, twist and pull.

2. Mash the avocado. I like mine chunky so I just use a fork.  3. Add diced garlic and lime juice. I used pre-diced garlic in a jar. I use it so much so it is WAY easier for me that way.

4. Add pico and stir. Don't worry about the color. It tastes delicious!

5. Store sealed in the refrigerator until you are ready to devour :)

For the Taquitos:

5 chicken breast tenderloins, 1 cup pico (recipe here), 1 tsp chili powder, 1 tsp cumin, 1/2 teaspoon garlic powder, salt to taste, corn tortillas, olive oil

Chicken:

Mix together the pico and spices. Put the chicken in the crock pot and top with the pico mixture. Cook on high for 4 hours. Shred

Preheat oven to 375 Fill each tortilla with the chicken mixture. Wrap and stick with a toothpick. Place on an oiled pan (I just spread a little olive oil. A little goes a LONG way). Brush the tops with a little olive oil. Cook for 12-15 min

You can squeeze the second half of your lime on top of them if you'd like.
