I was in the mood for pasta tonight, so I got my kitchen helper and started creating. She made beautiful music while I worked ;)Ingredients:Chicken- 5 chicken breast tenderloins 1 tsp olive oil 1/2 tsp garlic powder 1 tsp thyme salt and pepper to taste
Pasta- 3 cups pasta (I used brown rice quinoa pasta) water 1 tsp EVOO 1 clove chopped garlic 1/2 tsp oregano 1/4 tsp crushed red pepper Salt to taste
1. Cook your chicken in 1 tsp EVOO. I usually use a pan and place it in frozen. I cook covered for about 7-10 min on medium-high heat until the chicken starts to turn golden.
2. Add seasonings
3. Cook for an additional 5 minutes
1. Boil pasta to al dente
2. Mix EVOO, garlic, and seasoning in a small boil
3. Pour onto pasta and toss
4. Top with prepared chicken
This pairs well with almond asparagus! I love the taste of the asparagus with the little hint of heat in the pasta.
