I have been playing around with this recipe for a while now. I love Mexican rice and have been very picky about it, plus brown rice is very particular about the way it's cooked ;) lol I am finally happy enough to share this recipe with you guys! I hope you enjoy!
Ingredients: 1 cup brown rice 2 cups chicken broth 3/4 cup tomato sauce 1 tsp garlic salt 1/2 cup water 1/2 tsp cumin optional- 1/4 cup chopped white onion or other vegetables of your choice
1. Add rice and water to a pot. Bring to a boil, cover and let simmer for 30 min. 2. Add tomato sauce, garlic salt, cumin, and water and cook covered for an additional 10-15 min 3. Remove from heat and let stand for 5 min. 4. Fluff and enjoy
It is the perfect side dish for fajitas and tacos and makes a great bed for seasoned chicken!!
