Gluten, sugar, and dairy free waffles

I woke up this morning wanting the syrupy goodness of waffles! It is rainy and gross outside, so it was the perfect way to brighten and warm up our day! These waffles are delicious and guilt free! I have become a big fan of coconut flour for baking because it is very light and airy. I am super impressed by the way these turned out :)

Ingredients (makes 4 large waffles):

4 eggs 2 tbsp melted coconut oil 1/4 cup sifted coconut flour 1 tsp vanilla 1 tsp cinnamon 1/2 cup unsweetened almond milk (I used vanilla)

1. Separate the egg whites and put them in a large mixing bowl.

2. Beat the egg whites until stiff peeks form. Set aside.

3. In small mixing bowl, combine the remaining ingredients and stir until smooth. 4. Fold in the egg whites

5. Pour mixture onto heated waffle iron and cook.

6. Top with desired toppings or enjoy as is.

These are really good with some pure maple syrup. This is the brand I buy. Remember to ready your labels when buying your food! You will want to get 100% pure!
