Easy Roast chicken with Carrots and Potatoes


I love to keep things simple!! Being a mother with a teething, active, and curious little one, I need to be able to make meals that are throw and go. This is one of them and it tastes like a feast when it's done. Bonus points...hubby loves it!

So this is it:

Chicken (I used 5 drumsticks tonight) Red potatoes (cut into fourths) Carrots (chopped) Olive Oil Thyme Garlic Powder Salt Pepper

Preheat the oven to 370 degrees

Pour enough oil in the bottom to coat the pan. I used a 9x11 casserole dish.

Lay the chicken in the pan and surround it with veggies.

Sprinkle your seasoning and drizzle a little more oil on top. Use a basting brush to spread the oil and seasoning evenly.

Cook on 370 for 45 min - 1 hour. (Chicken needs to be at least 165 degrees inside)
