You know I'm a big fan off KISS (keep it super simple) when it comes to my meals! Tonight was no different! This is easy to throw on a pan and cook for a DELICIOUS dinner! I also, cooked two meals at once tonight. Check out what else I did with my butternut squash here! Simplicity and time saving all at once. I AM A FAN! So let's get to it! Ingredients: 1 tbsp olive oil 3 boneless skinless chicken breasts 2 cups chopped butternut squash 2 cups halved brussel sprouts 1 peeled and chopped apple 1/4 cup chopped turkey bacon (I used 4 slices) salt, pepper, and thyme to taste (I just sprinkle across the pan)
- Preheat your oven to 400
- Place chicken on greased baking sheet
- Surround chicken with vegetables, apple, and bacon
- Lightly mist or brush combination with olive oil
- Sprinkle with seasonings
- Cook for around 35 minutes making sure chicken is cooked to at least 165 degrees
That's it! Super simple and VERY yummy! Feel free to add any vegetables you like. It is a very versatile dish!
