Cauliflower Pizza

I've been super skeptical to try this because I love pizza. The thought of getting veggies in while eating pizza was very appealing though and I finally gave in. I am SO glad I did!! This stuff is delicious and super simple! Ingredients: Florets from 1 head of cauliflower or a pound of cauliflower florets 3 eggs 2 cups parmesan cheese 1 clove minced garlic 1 tsp chopped basil 1/2 tsp sea salt

olive oil (for brushing) sprinkle of garlic salt toppings of choice (I used marinara sauce (check the ingredients for no sugar) and mozzarella cheese)

1. Preheat the oven to 450 2."Rice" your cauliflower florets by pulsing in your blender until you have a rice-like consistency and place in a large bowl. You may have to do a little at a time depending on your blender 2. Add in the eggs, cheese, garlic, basil, and salt and mix to form a "dough" 3. Place your dough on lightly greased parchment paper on a pan (I used a baking mat in place of parchment paper) 4. Flatten it out into circles or a rectangle to desired thickness. The thiner the crust, the crispier it will be. 5. Lightly brush with olive oil and sprinkle with garlic salt 5. Bake for 18 minutes 6. Remove from the over and discard parchment paper. Place the crust directly on the pan. 7. Top with desired toppings 8. Broil on high for 5 additional minutes
