When I'm having a bad day, one of my favorite ways to put a little pep in my step is to get creative in the kitchen! Today, these yummy bowls were invented! I keep batch baked sweet potatoes at my house so I can easily make meals like this or just eat them with some pumpkin pie spice.
What you will need: 3 medium sweet potatoes 1 tsp coconut oil 2 tbsp almond milk 1/2 pound of ground turkey 1 tsp extra virgin olive oil 1/2 onion (diced) 1 green pepper (diced) 2 cloves garlic Salt and mozzarella cheese to taste
For the mashed potatoes: 1. Bake or steam your sweet potatoes until soft and the skin easily peels off (on 400 for about 45 min) 2. Remove the skin and place in a mixing bowl with coconut oil and almond milk. 3. Mix until fluffy
For the turkey: 1. Cook ground turkey on med-high heat until brown. Drain and set aside. 2. In the same pan, add your olive oil, onions, and peppers. Cook until soft (about 5-7 min) 3. Add cooked turkey and garlic into the pan with the vegetables and cook for 3 more minutes 4. Place meat mixture on top of a scoop of sweet potatoes. Immediately add cheese and salt to taste.
